At Gaia, we cultivate both the land and the joy of living. Here, vegetables, herbs, and flowers sprout in harmony with the seasons—and with respect for nature’s own rhythms. We emphasize regenerative cultivation and the circular use of resources: soil, water, and nutrients circulate as they do in nature.

The Walipini is Gaia’s partially subterranean greenhouse, designed to extend the growing season and create a mild, balanced climate where vegetables and herbs can thrive well into autumn. Here, vegetables, herbs, and edible flowers grow in a balanced interplay of light, air, and moisture—a small heart of the earth where life pulses through every season.

The word Walipini comes from the Aymara language of the Andes in Bolivia and means “a place of warmth.” There, this simple yet ingenious method was developed to grow vegetables year-round—even in the cold climate of the high mountains.



The Walipini is gradually taking shape. Here, both plants and ideas are sprouting, and we envision that the space will eventually become a place for sharing, learning, and celebrating the earth.

A Living Community

Cultivation at Gaia is about more than food production—it is about connection. We believe in planting seeds both in the soil and in people’s hearts. Much of what we grow is used in our kitchen, in seasonal dishes shared with visitors during events and festivals.
